»Regional dishes are often the result of a pragmatic use of the ingredients available. Originally conceived to use up leftovers, the pizza has emerged as a classic. Labskaus has not yet enjoyed quite the same success, and as a North Germany dish for using up leftovers enjoys a somewhat dubious reputation. This book is meant to assist it in doing so. The basic idea for the dish is exciting; it just needs bringing up to date. It is much the same with architecture. When designing something we first look into the history of the site and the building, and then ask ourselves what is in tune with the times and what needs to be changed«.
